Candied Sweet Potatoes Recipe

Serves 1

Ingredients:

  • 2 sweet potatoes (medium), diced
  • 1 cup water
  • 1/4 cup sugar
  • 1/4 cup light brown sugar (packed)
  • 4 tbsp unsalted butter
  • 1 1/2 tsp vanilla extract
  • Juice and grated rind from 1 lemon


Instructions:

1. In a 1-quart saucepan combine sweet potatoes, water, sugars, 2 tbsp of the butter; the vanilla and lemon juice and rind.
2. Cover and cook over medium heat for 20 minutes, stirring occasionally; uncover and cook until potatoes are fork tender, about 10 minutes.
3. Add the remaining butter, stirring until completely melted.
4. Cook uncovered until sauce is thick, about 2 minutes more. Makes about 1 cup.
