Brown Sugar-Lemon Glazed Roasted Sweet Potatoes Recipe

Serves 4

Ingredients:

  • 6 large sweet potatoes, skin on, cut into 2 inch cubes
  • 2 tbsp vegetable oil
  • Salt and freshly ground, pepper
  • 4 tbsp unsalted butter
  • 1 cup brown sugar
  • 1 tbsp lemon rind, finely grated
  • 2 tbsp lemon juice


Instructions:

1. Preheat the oven to 375 degrees. 2. Toss the potatoes with the vegetable oil and season lightly with salt and pepper to taste.
3. Bake in the oven for 25 minutes.
4. While the potatoes are baking, place the butter, brown sugar, lemon zest, and lemon juice in a medium saucepan and melt over medium heat.
5. Remove the potatoes from the oven and toss with the melted sugar mixture.
6. Return to the oven and continue cooking for 10 minutes or until the potatoes are cooked through and glazed.
