Herbed Fish Fillets Recipe

Serves 6

Nutritional Analysis per Serving: 150 calories, 9 g carbohydrates, 15 g protein, 6 g fat, 22 mg calcium, 110 mg sodium, 70 mg cholesterol, 0 g dietary fiber.

Ingredients:

  • 1/2 cup enriched corn meal, Aunt Jemima or Quaker
  • 1/2 tsp salt (optional)
  • 1/2 tsp dillweed
  • 1/2 tsp paprika
  • 1/4 tsp pepper
  • 1 lb cod, halibut or sole fillets (fresh, or frozen and thawed)
  • 1 egg, beaten
  • 2 tbsp milk
  • 2 tbsp margarine or butter, melted


Instructions:

1. Heat oven to 350 F.
2. Combine corn meal and seasonings.
3. Dip fish in combined egg and milk.
4. Coat with corn meal mixture.
5. Place in 15x10-inch jelly roll pan.
6. Drizzle with margarine.
7. Bake 15 to 20 minutes or until golden brown.
8. Garnish with parsley and lemon wedges, if desired.
