Baked Fish with Potatoes Recipe

Serves 8

Ingredients:

  • 4 lbs fillet of fish
  • 1 green pepper, chopped
  • 3 garlic cloves, chopped
  • 3 bay leaves
  • 1 can stewed tomatoes, pureed
  • 2 large onions, chopped
  • 4 celery stalks, chopped
  • 1/2 bunch parsley, chopped
  • Pinch of sugar
  • 6 potatoes, cut-up
  • Olive oil


Instructions:

1. Saute onions, pepper, celery, garlic, and parsley in olive oil.
2. Add blended tomatoes and bay leaves.
3. Cook approximately for 1 hour, add sugar.
4. Oil a roasting pan, season the fish with salt and pepper.
5. Place fish in pan with cut-up potatoes.
6. Pour sauce over potatoes and fish.
7. Bake for approximately 1 hour.
8. Basting every 15 minutes.
