Baked Chicken with Mushrooms and Artichokes Recipe

Serves 4


  • 4 chicken breast halves
  • Salt and pepper
  • 1 6 oz jar marinated artichoke hearts
  • 8 ounces fresh mushrooms, sliced
  • 5 green onions, chopped
  • 1 cup dry white wine


1. Preheat oven to 350.
2. Season chicken breast halves with salt and pepper.
3. Place skin side up in 9" by 13" baking dish.
4. Drain artichokes, reserving marinade.
5. Cut artichokes in half.
6. Top chicken breasts with artichokes, mushrooms, and green onions.
7. Pour reserved marinade and white wine over.
8. Bake until chicken is cooked through, about 45 minutes.
