Snow Muffins Recipe

Makes 12 muffins

Ingredients:

  • 2 cup sifted cake and pastry flour
  • 3 tsp baking powder
  • 1/2 cup white or brown sugar
  • 3/4 tsp salt
  • 3/4 cup milk
  • 3 tbsp melted butter
  • 1/2 tsp grated lemon or orange rind
  • 1/2 cup clean white snow (clean frost scraped from a freezer may be used instead)
  • 1/2 cup raisins


Instructions:

1. Mix dry ingredients in a bowl.
2. Make a depression in the centre and pour in the milk, butter and grated rind.
3. Stir slightly.
4. Add snow and raisins.
5. Stir only until dry ingredients disappear.
6. Spoon into 12 buttered muffin cups filling two thirds full.
7. Bake at 400F for 15 to 18 minutes.
8. Serve hot with butter or strawberry preserves.
