Strawberry Oat Bran Muffins Recipe

Makes 6 muffins

Nutrition per Muffin: 118 Calories, Carb 21 g, Fat 4 g, Protein 4 g, Fiber 2 g, Sodium 74 mg, Cholesterol Trace.

Ingredients:

  • 1 cup oat bran, uncooked, plus 2 tablespoons
  • 1/4 cup sugar, brown
  • 1 tsp baking powder
  • 1 tbsp oil
  • 1 egg white, slightly beaten
  • 1/4 cup skim milk
  • 1/2 cup strawberries, frozen unsweetened, with juice, slightly thawed
  • 1 drop red food coloring (optional)


Instructions:

1. Place all ingredients in blender, mix until well blended.
2. Line 6 six ounce custard cups with 2 cupcake liners.
3. Fill 3/4 full.
4. Arrange in circle in microwave.
5. Microwave for 3 to 3 1/2 minutes on HIGH.
6. Allow to cool before serving.
