Streusel Apple Muffins Recipe

Makes 12 muffins

Ingredients:

  • 1 1/4 cup flour, all purpose
  • 1 cup quick or old-fashioned oats,, uncooked
  • 1/4 cup firmly packed brown sugar
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup milk
  • 1/4 cup margarine or butter, melted
  • 1 egg
  • 1/2 tsp vanilla
  • 1 medium apple, finely chopped
  • 1/3 cup quick or old-fashioned oats,, uncooked
  • 1/4 cup flour, all-purpose
  • 1/4 cup brown sugar, firmly packed
  • 1 tsp cinnamon
  • 1/4 cup margarine or butter


Instructions:

1. Heat oven to 425F.
2. Grease bottoms only of 12 medium muffin cups or line with paper baking cups.
3. Combine dry ingredients.
4. Add milk, margarine, egg and vanilla, mixing just until dry ingredients are moistened; stir in apple.
5. Fill prepared muffin cups 3/4 full.
6. Topping: Combine dry ingredients; cut in margarine until crumbly.
7. Sprinkle evenly over batter.
8. Bake 18-20 minutes or until deep golden brown.
9. Serve warm.
