French Doughnut Muffins Recipe

Makes 12 muffins

Ingredients:

  • 1 each large egg, beaten
  • 1/2 cup 1% milk
  • 1/3 cup margarine, melted
  • 1 1/2 cups + 2 tbsp unbleached flour
  • 3/4 cup sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp nutmeg
  • 1/3 cup margarine, melted
  • 1/2 cup sugar
  • 1 tsp cinnamon
  • 1/2 tsp vanilla extract


Instructions:

1. Preheat oven to 400F. Lightly spray muffin tin.
2. Beat egg. Add 1/2 cup milk and 1/3 cup melted margarine.
3. Combine flour, 3/4 cup sugar, baking powder, salt, and nutmeg.
4. Blend well with egg mixture.
5. Fill greased muffin tins 1/2 full.
6. Bake 15 minutes until browned.
7. Immediately remove muffins from pan and dip in remaining 1/3 cup margarine.
8. Roll in cinnamon/sugar/vanilla mixture. Serve warm.
