Feather-Light Muffins Recipe

Makes 8 muffins

Ingredients:

  • 1/3 cup shortening
  • 1/2 cup sugar
  • 1 egg
  • 1 1/2 cups cake flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • 1/2 cup milk
  • 1/2 cup sugar
  • 1 tsp ground cinnamon
  • 1/2 cup butter/margarine, melted


Instructions:

1. In a mixing bowl, cream shortening, sugar and egg.
2. Combine dry ingredients; add to the creamed mixture alternately with milk.
3. Fill greased muffin tins 2/3 full.
4. Bake at 325 for 20 to 25 minutes or until golden.
5. Let cool for 3-4 minutes.
6. Meanwhile, combine sugar and cinnamon in a small bowl.
7. Roll warm muffins in melted butter, tehn in sugar mixture.
8. Serve warm.
