Zucchini Pie Recipe
Serves 8 Ingredients: Filling:
4 cups zucchini, peeled and seeded, sliced 1/4 inch thick
Salt water
1 cup warm water
1 cup brown or white sugar
1 tsp cinnamon
1 tsp cream of tartar
1 unbaked pie shell
Streusel topping:
1/2 cup sugar
1/2 cup flour
1/2 cup butter
Instructions: 1. Parboil prepared zucchini in salt water until tender.
2. Drain; put in bowl.
3. Add warm water, sugar, cinnamon and cream of tartar.
4. Place in unbaked pie shell.
5. Bake for 1/2 hour at 350 F.
6. Top with Streusel Topping mixture.
7. Return to oven for 1/2 to 3/4 hour.
Streusel Topping:
Mix all ingredients together.
