Zucchini Muffins Recipe

Makes 24 muffins

Ingredients:

  • 2 1/2 cups all-purpose or self-rising flour (if using self-rising flour, omit the salt, baking powder and baking soda)
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 2 eggs
  • 1 1/4 cups sugar
  • 3/4 cup plus 2 tsp oil
  • 2 1/2 cups grated zucchini
  • 2 tsp vanilla
  • 1 tsp nutmeg,(optional)


Instructions:

1. Mix flour with baking powder, baking soda, salt, cinnamon and nutmeg, if using.
2. Mix in sugar.
3. Add wet ingredients (eggs, oil, vanilla, zucchinis) and mix till just combined.
4. Spoon into prepared muffin pans.
5. Bake at 350 F for 15 minutes or until done.
