Ukrainian Bean Soup Recipe

Serves 10

Ingredients:

  • 1 lb white beans, dried
  • 1 1/2 lbs sauerkraut
  • 3/4 lb salt pork
  • 4 potatoes, cubed
  • 1/2 cup vegetable oil
  • 1 1/2 tbsp flour
  • 1 large onion, coarsely chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • 4 bay leaves
  • 3 garlic cloves, minced
  • 2 tbsp peppercorns
  • 1/2 cup yogurt, plain
  • 1 large carrot, chopped


  • Instructions:

    1. Soak the beans overnight.
    2. Cook the meat, potatoes, beans and sauerkraut separately.
    3. Bone the meat when it is done and cut into 1/2-inch cubes.
    4. Dice the potatoes.
    5. Crush the beans.
    6. Make a roux with the oil, flour and onion.
    7. Put meat and vegetables into a pot, add the roux, and the bay leaves.
    8. Cover with the stock and cook for 10 minutes more.
    9. Before serving, add the yogurt.
