Nearly Instant South American Tomato and Scallion Soup Recipe

Serves 4 to 6

Ingredients:

  • 3 cups roughly chopped tomatoes
  • 1 bunch sliced green onions (or more)
  • 1/3 cup olive oil
  • 3 tbsp red wine vinegar (or rice vinegar)
  • 1 tsp salt
  • 1/2 tsp black pepper


  • Instructions:

    1. Toss together.
    2. Let sit around in the fridge for awhile.
    3. Serve.
    4. Feeds four or so.
