Winter Squash and Apple Soup Recipe
Serves 6 Ingredients: 2 cup butternut squash, or buttercup squash, peeled, seeded and chopped
2 cup sweet potato, peeled and chopped
3 medium apples, peeled, cored and chopped (Spartan, McIntosh or similar cooking apple)
1 medium onion, chopped
2 cups water or just enough to cover apples and veggies
1/2 tsp sea salt
1/2 tsp chinese 5 spice, or pumpkin pie spice
1/4 tsp cayenne pepper
Instructions: 1. Bring the vegetables, apples and water to a boil in a saucepan on high heat.
2. Reduce the heat and simmer 30 minutes, or until all the vegetables are tender.
3. Add the seasonings and use a blender to process the mixture.
4. Heat in the saucepan again on low heat until hot.
5. Keeps 3-5 days refrigerated.
