Hot Spinach and Mushroom Salad Recipe

Serves 4



Ingredients:

  • 1 1/2 lb spinach
  • 2 tbsp corn oil
  • 4 oz mushrooms, slice thin
  • 1 cup onions, diced
  • 4 tsp lemon juice, fresh
  • 4 tsp white vinegar
  • 2 tsp sugar
  • Black pepper, fresh ground
  • 2 tbsp yogurt, plain, low-fat


Instructions:

1. Wash fresh spinach and remove all tough stems; drain well.
2. In hot oil, saute mushrooms and onions until onions are wilted.
3. Add lemon juice, vinegar, sugar and pepper; mix well.
4. Stir in spinach and cook only until spinach begins to wilt.
5. Remove from heat and stir in yogurt.
6. Serve immediately.
