Hot Spinach and Mushroom Salad Recipe
Serves 4
Ingredients: 1 1/2 lb spinach
2 tbsp corn oil
4 oz mushrooms, slice thin
1 cup onions, diced
4 tsp lemon juice, fresh
4 tsp white vinegar
2 tsp sugar
Black pepper, fresh ground
2 tbsp yogurt, plain, low-fat
Instructions: 1. Wash fresh spinach and remove all tough stems; drain well.
2. In hot oil, saute mushrooms and onions until onions are wilted.
3. Add lemon juice, vinegar, sugar and pepper; mix well.
4. Stir in spinach and cook only until spinach begins to wilt.
5. Remove from heat and stir in yogurt.
6. Serve immediately.
