Rhubarb-Pecan Muffins Recipe

Makes 12 muffins

Per Muffin: 150 calories, 1.7 g total fat, 10.1% CFF.

Ingredients:

  • 2 cups flour
  • 3/4 cup sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1/2 cup chopped pecans
  • 4 tbsp Just Whites or 1 egg or 2 egg whites
  • 1/4 cup warm water
  • 1/4 cup Lighter Bake (or oil)
  • 1/4 cup orange juice
  • 1 1/4 cups rhubarb, finely chopped


Instructions:

1. Combine all dry ingredients.
2. Follow directions to mix Just Whites, add lighter bake and orange juice.
3. Add liquid to dry ingredients, mix.
4. Add rhubarb.
5. Lightly spray muffin cups with vegetable spray or line with paper muffin cups.
6. Bake 350F for 25-30 min.
