Rhubarb-Pecan Muffins Recipe

Makes 12 muffins

Ingredients:

  • 2 cup flour
  • 3/4 cup sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 3/4 cup chopped pecans
  • 1 egg, large
  • 1/4 cup vegetable oil
  • 2 tsp grated orange peel
  • 3/4 cup orange juice
  • 1 1/4 cup rhubarb, fresh fine chopped


Instructions:

1. Combine all dry ingredients.
2. Beat egg and oil; add orange juice.
3. Add to flour mix.
4. Add rhubarb.
5. Bake 350F 25-30 min
