Vegan Pumpkin Pie Recipe

Serves 6 to 8

Ingredients:

  • 10 oz firm silken tofu
  • 1 15-oz can pumpkin
  • 1/2 cup fruit source or granulated date sugar
  • 1/3 cup oil
  • 2 tsp molasses
  • 1 tsp vanilla extract
  • 2 1/2 tsp ground cinnamon
  • 1 tsp nutmeg
  • 1 tsp allspice
  • 1/4 tsp ginger
  • 1 unbaked crust of your choice


Instructions:

Blend all ingredients, pour into pie shell and bake for 1 hour at 350 F, or until done.
