Pumpkin Soup Recipe

Serves 6 to 8

Ingredients:

  • 1 can pumpkin puree (1 lb 13 oz)
  • 1 qt milk
  • 2 tbsp butter
  • 2 tbsp honey
  • 2 tbsp maple syrup
  • 1/2 tsp marjoram, dried, powdered
  • 1 ds fresh ground pepper
  • 1/4 tsp cinnamon
  • 1/4 tsp mace
  • 1 tsp salt
  • Juice of 1 orange



  • Instructions:

    1. Heat pumpkin puree, milk, butter, and honey together slowly in a large saucepan, stirring.
    2. Combine maple syrup, marjoram, pepper, cinnamon, mace, and salt, stir into pumpkin-milk mixture.
    3. Heat slowly, stirring to simmering point.
    4. Do not boil.
    5. Add the orange juice, a little at a time, stirring constantly.
    6. Serve hot.
