Pumpkin Puff Pancakes Recipe

Serves 4 to 5

Makes about five dozen, 2" pancakes.

Ingredients:

  • 2 eggs
  • 1 cup milk
  • 1/2 cup cooked pumpkin (canned is ea
  • 1 3/4 cup bisquick mix
  • 2 tbsp sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1/4 cup salad oil


Instructions:

1. Beat eggs in a small mixer bowl on high speed for 5 minutes or until thick and lemon-colored.
2. Stir in remaining ingredients.
3. Pour batter by Tbsps.
4. Onto medium-hot griddle.
5. Bake until puffed and bubbles begin to break.
6. Turn and bake> other side until golden brown.
