Pumpkin Pancakes Recipe - Printable Version Serves 6 to 8
- 2 cups flour
- 2 tbsp sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1 3/4 cups milk, can use non-fat
- 1 cup canned pumpkin
- 2 large eggs
1. Mix dry ingredients in a bowl.
2. In another bowl, beat milk, pumpkin, eggs and oil.
3. Add dry ingredients to wet ingredients and stir until just moistened.
4. Cook on griddle at medium as for regular pancakes
