Pumpkin Muffins (No Fat) Recipe

Makes 12 muffins

Each serving of six (6) muffins equals the following Weight Watchers Exchanges: 1 Bread, 1 Fruit, 1 Milk, 1 Protein and 1 1/2 Vegetables.

Ingredients:

  • 1 cup pumpkin
  • 1 tsp cinnamon
  • 2 eggs
  • 1 tsp vanilla
  • 6 tbsp flour
  • 1 tsp baking powder
  • 4 tbsp raisins
  • 1/2 cup carrots, grated
  • 2/3 cup powdered milk
  • 10 pk sweet and low
  • 2 tsp pumpkin pie spice


Instructions:

1. Mix all ingredients. You may substitute Egg Beaters for the eggs and Equal for the Sweet and Low.
2. Spray muffin tin with Pam.
3. Divide equally.
4. Bake at 350 F for 25 minutes.
5. These freeze well.
