Sweet Potato Patties Recipe

Serves 4

Ingredients:

  • 1 1/2 lb sweet potatoes, cut into pieces and boiled
  • 2 tsp virgin or extra-virgin olive, oil
  • 1/2 tsp salt
  • 1 dash pepper and nutmeg
  • 1/4 cup hot skimmed milk
  • 1/2 cup pecans, chopped
  • 1/2 cup pecans, ground butter


    Instructions:

    1. Drain sweet potatoes and mash with a fork, ricer or electric mixer.
    2. Add oil, salt, pepper, nutmeg, and milk, beating until light and fluffy.
    3. Stir in chopped pecans and shape into 8 flat round patties.
    4. Dip both sides into ground pecans to coat.
    5. Place on a lightly oiled baking sheet and dot with butter.
    6. Bake in a preheated 450F.
    7. Oven for 20 minutes.
    8. Serve with a mushroom gravy.
