Wisconsin Potato Cheese Soup Recipe

Serves 8


  • 2 tbsp butter or margarine
  • 1 1/2 tsp salt
  • 1/3 cup chopped celery
  • 1/4 tsp pepper
  • 1/3 cup chopped onions
  • 1 dash paprika
  • 4 cup diced peeled potatoes
  • 8 oz shredded Cheddar cheese
  • 3 cup chicken broth
  • Croutons
  • 2 cup milk
  • Fresh chopped parsley (optional)


1. In a large saucepan, melt butter over medium-high heat.
2. Saute celery and onion until tender.
3. Add potatoes and broth.
4. Cover and simmer until potatoes are tender, about 12 minutes.
5. In batches, puree potato mixture in a blender (or food processor).
6. Return to saucepan.
7. Stir in milk and seasonings.
8. Add the cheese and heat only until melted.
9. Top with croutons and garnish with parsley if desired.
