Baked Sweet Potatoes Recipe
Serves 8 Ingredients: 2 cups sugar
1 tsp nutmeg
1/2 tsp salt
6 tbsp butter, unsalted
4 tbsp lemon juice
6 sweet potatoes, medium
6-inch strip of lemon rind
Instructions: 1. Rinse the potatoes under warm water.
2. Place in large pot, cover with cold water and bring to a boil.
3. Reduce heat and simmer until potatoes are tender, about 30 minutes.
4. Drain and let cool.
5. In a saucepan over medium heat, combine the sugar, 1/2 cup water, nutmeg, lemon rind and salt.
6. Simmer for 10 minutes. Add 5 tbsp of the butter and stir well.
7. When the butter has melted, remove from heat, beat in the lemon juice and set aside.
8. Preheat oven to 425 F.
9. Peel the sweet potatoes and slice into 1/2-inch discs.
10. Use the remaining butter to grease a shallow baking dish.
11. Lay the sweet potatoes in a single layer, pour the lemon syrup on top and bake for 30 minutes until bubbling hot.
