Potato Soup Recipe

Serves 4


  • 1 tbsp olive oil
  • 3 large potato peeled and diced
  • 2 large celery chopped
  • 1 medium carrot chopped
  • 1 medium onion chopped
  • 4 cups skim milk
  • 4 tbsp flour
  • 1/2 cup powdered milk
  • 2 tbsp butter
  • Salt and pepper


1. Heat olive oil in stock pot, add onion, carrot, celery, salt and pepper and saute until translucent.
2. Add potatoes and cover with water.
3. Bring to a boil and cook until tender.
4. Mix milk, flour and powdered milk and stir or shake until all lumps are gone.
5. Combine remaining ingredients and heat until warm.
6. Serve with hot buttered toast.
