Potato Leek Soup Recipe

Serves 6 to 8

Ingredients:

  • 3 ounces butter
  • 4 leeks, chopped
  • 2 stalks celery, diced
  • 2 onion, chopped
  • 3 potatoes, chopped
  • 1 1/2 quarts water
  • 1 1/2 cups cream
  • Salt
  • Pepper


  • Instructions:

    1. In large pot combine butter, leeks, celery and onion.
    2. Saute for about 8 minutes.
    3. Add potatoes and water.
    4. Bring to a boil.
    5. Lower heat and simmer for about 30 minutes.
    6. During the last 5 minutes of cooking add cream and seasoning.
    7. Serve hot.
