Potato Leek Soup Recipe
Serves 6 to 8 Ingredients: 3 ounces butter
4 leeks, chopped
2 stalks celery, diced
2 onion, chopped
3 potatoes, chopped
1 1/2 quarts water
1 1/2 cups cream
Salt
Pepper
Instructions: 1. In large pot combine butter, leeks, celery and onion.
2. Saute for about 8 minutes.
3. Add potatoes and water.
4. Bring to a boil.
5. Lower heat and simmer for about 30 minutes.
6. During the last 5 minutes of cooking add cream and seasoning.
7. Serve hot.
