Parsley and Potato Soup Recipe

Serves 4

Ingredients:

  • 1 medium onion, chopped
  • 1 tsp olive oil
  • 2 cups chopped potatoes
  • 1 cup sliced leeks, white parts only
  • 4 cups stock
  • 1 tsp salt
  • 1/4 tsp white pepper
  • 2 tbsp chopped fresh chives
  • 1/4 cup chopped fresh parsley



  • Instructions:

    1. In a large pot, combine all the ingredients except the salt, pepper, chives and parsley.
    2. Cover the pot and bring to a boil.
    3. Lower heat and simmer for 30 minutes.
    4. Cool slightly, then puree.
    5. Season with salt and pepper and garnish with chives and parsley.
