Red Hot Chile Bran Muffins Recipe
Makes 72 muffins
Per muffin: 127 Calories; 6g Fat (40% calories from fat); 2g Protein; 17g Carbohydrate; 11mg Cholesterol; 168mg Sodium
Ingredients: 1 box raisin bran (15-oz)
3 cups sugar
5 cups flour
5 tsp baking soda
2 tsp salt
1 1/2 tsp cloves
2 tsp nutmeg
3 tsp cinnamon
4 eggs, beaten
1 cup oil
1 quart buttermilk
2 tsp vanilla
3 packages dried fruit bits
2 cups nuts, chopped (e.g. walnuts)
Peppers (Can be omitted):
12 thai chiles, finely minced
2 fresh jalapenos, sliced into rings
4 orange habaneros, sliced into rings
Instructions: 1. Simmer the fruit in water until very soft and they have absorbed all the juice they are going to (about 15-20 minutes). Drain.
2. Mix dry ingredients in a BIG bowl or pan. Add Thai chiles. These have to be minced very finely.
3. Add remaining ingredients. Mix well.
4. Spoon into muffin tins lined with paper cupcake papers about 2/3 full. Place jalapeno and habanero rings on top.
5. Bake at 400 degrees for 20 minutes -- if using miniature muffin tins, reduce baking time to 15 minutes. (Be wary! The batter is enough for around 150 mini-muffins).
