Jalapeno Corn Muffins Recipe

Makes 12 muffins

Ingredients:

  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 2 tsp sugar
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1 egg, lightly beaten
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 1 4-oz can green chiles, chopped and drained


  • Instructions:

    1. Preheat oven to 400 F.
    2. Grease twelve 2 1/2-inch muffin pan cups.
    3. In large bowl combine flour, cornmeal, sugar, baking powder, and salt.
    4. Add egg, sour cream, milk, butter, and green chiles.
    5. Whisk until batter is smooth.
    6. Spoon batter into muffin pan cups.
    7. Bake for 15 to 18 minutes.
    8. Serve warm.
