Sweetcorn Fondue Recipe
Serves 4 Ingredients: 1 lb frozen sweetcorn kernels
2 tsp cornflour
3 tbsp single cream
Salt and pepper
A few drops Tabasco sauce
1 oz butter
Selection of cooked prawns and mussels, to serve
Instructions: 1. Put sweetcorn in a saucepan with 2 tablespoons water and simmer for a few minutes until tender.
2. Drain and put into a blender.
3. Process until soft but not too smooth.
4. In a saucepan, blend cornflour smoothly with cream.
5. Add sweetcorn mixture and cook over a low heat until smooth.
6. Pour mixture into fondue pot, season with salt, pepper and Tabasco sauce, then beat in butter.
7. Set pot over a low burner to keep warm.
8. Serve with a selection of cooked shellfish.
