Pea and Carrot Salad with Lovage Recipe
Serves 4 Ingredients: 1 lb fresh peas
1 1/2 lb baby carrots
3 tbsp mayonnaise (tofu or regular)
3 tbsp natural yogurt
1 tsp Dijon mustard
1 1/2 tbsp chopped lovage
Instructions: 1. Slice carrots.
2. Combine with peas and steam for no more than 15 minutes.
3. Cool slightly.
4. Mix together the mayonaisse and yogurt.
5. Add mustard.
6. Fold in the lovage, followed by the peas and carrots.
7. Allow to cool completely, then serve.
