Onion Sauce Recipe

Makes 2 cups

Ingredients:

  • 11 oz onions
  • 15 oz marrow bones
  • 1/2 cup beef broth
  • 2 tbsp dry cherry
  • Salt
  • Pepper
  • 1/2 bn chives


Instructions:

1. Put onions, unpeeled, on a plate, cover with wet papertowl and cook in microwave on high for 8 minutes.
2. Cool and peel.
3. Heat bones at high in microwave for 1 minute.
4. Loosen marrow out of the bones.
5. Heat the marrow, onions and the broth at high for 2 minutes, then with a hand mixer puree very fine.
6. Add the cherry.
7. Season with salt and pepper.
8. Wash the chives and cut into little rolls and add to sauce.
9. Serve sauce with roast beef.
