Easy-To-Make Bean Soup Recipe

Serves 4 to 6

Ingredients:

  • 3/4 to 1 cup chopped onion
  • 1 tbsp vegetable oil
  • 1 (4-ounce) can green chilies, drained
  • 1 (16-ounce) can refried beans
  • 2 cups chicken broth Salt, pepper and hot pepper sauce to taste
  • 2 tbsp chopped fresh cilantro
  • 6 tbsp (approx.) grated Monterey Jack or Cheddar cheese
  • 6 tbsp (approx.) sour cream



  • Instructions:

    1. Place chopped onion and oil in a large saucepan over med-high heat and cook until onions are soft, but not brown.
    2. Coarsely chop green vhilies, unless they are already chopped, add to onions.
    3. Add refried beans stir in chicken broth.
    4. Cook and stir until soup is heated through and no lumps remain.
    5. Season to taste with salt and pepper (ingredients are already salty).
    6. Add spice to taste with pepper sauce.
    7. Stir in cilantro just before serving.
    8. Garnish each serving with grated cheese and sour cream.
