Olive Muffins Recipe
Makes 12 muffins Ingredients: 2 cup chopped pitted black olives
4 cup all-purpose flour
1 cup grated onion
1 1/2 cup olive oil, plus additional
Oil to brush muffin tins
3 tsp chopped fresh mint or 2 tsp crushed dried mint
2 tsp sugar
2 heaping tbsp double-action baking powder
Instructions: 1. Preheat oven to 350 degrees.
2. Rinse olives and drain.
3. Dry on paper towels.
4. Combine all ingredients, adding baking powder last.
5. Brush muffin cups with oil and dust with flour. (Do NOT use paper baking cups.)
6. Bake for 40 to 45 minutes, or until golden and serve warm.
7. Variation: can be baked in 9x5 inch loaf pans. Increase baking time by 15 minutes.
