Italian Lentil Minestrone Soup Recipe

Serves 1

Ingredients:

  • 2 cups dried lentils
  • 12 cups divided cold water
  • 1 6-oz can tomato paste
  • 3 minced celery ribs
  • 1 cup coarsely chopped cabbage
  • 1 cup sliced mushrooms
  • 1 chopped onion
  • 1 tsp Italian herbs, or 1/2 tsp dried oregano and 1/2 tsp basil
  • 1 tsp garlic salt
  • Pepper, to taste
  • Pinch of hot pepper flakes
  • 6 tbsp grated Parmesan cheese


  • Instructions:

    1. Soak lentils overnight in 6 cups water; drain, discard water.
    2. Combine lentils with remaining 6 cups water.
    3. Heat to boiling.
    4. Stir in remaining ingredients, except cheese.
    5. Cover and simmer for 45 minutes.
    6. Serve sprinkled with Parmesan cheese.
