Italian Lentil Minestrone Soup Recipe
Serves 1 Ingredients: 2 cups dried lentils
12 cups divided cold water
1 6-oz can tomato paste
3 minced celery ribs
1 cup coarsely chopped cabbage
1 cup sliced mushrooms
1 chopped onion
1 tsp Italian herbs, or 1/2 tsp dried oregano and 1/2 tsp basil
1 tsp garlic salt
Pepper, to taste
Pinch of hot pepper flakes
6 tbsp grated Parmesan cheese
Instructions: 1. Soak lentils overnight in 6 cups water; drain, discard water.
2. Combine lentils with remaining 6 cups water.
3. Heat to boiling.
4. Stir in remaining ingredients, except cheese.
5. Cover and simmer for 45 minutes.
6. Serve sprinkled with Parmesan cheese.
