Dutch Leek Soup Recipe

Serves 8

Ingredients:

  • 3/4 cup whole wheat flour
  • 2 cubes bouillon
  • 2 qts water
  • 1 cup milk
  • 1/8 tsp ground mace
  • 5 leeks, cleaned, chopped
  • 1/4 cup whipping cream
  • 2 cups shredded Edam or Gouda cheese


  • Instructions:

    1. Blend together flour, bouillon cubes and water.
    2. Stir in milk and mace.
    3. Bring to a boil; immediately reduce heat to simmer; simmer for 10 minutes.
    4. Add leeks and cream; simmer for 10 minutes.
    5. Serve cheese with soup at the table.
