Hungarian Goulash Soup Recipe
Serves 10 Ingredients: 4 medium onions, peeled and chopped
2 large cloves garlic, crushed
1/2 cup shortening or salad oil
3 1/2 tbsp Hungarian paprika
3 lbs lean beef chuck, cut into 1-inch cubes
2 large tomatoes, peeled and chopped
2 tsp caraway seeds
1 1/2 tsp dried marjoram
1 tsp minced lemon peel
8 cups water
2 tsp salt
1/2 tsp pepper
4 medium potatoes, peeled and cubed
Instructions: 1. Saute onions and garlic in heated shortening or oil in a large kettle until tender.
2. Stir in paprika; cook 1 minute.
3. Wipe beef cubes until dry.
4. Brown cubes, several at a time, on all sides.
5. Add tomatoes, caraway seeds, marjoram, lemon peel, water, salt, and pepper.
6. Bring to a boil.
7. Lower heat and cook slowly, covered, for 45 minutes.
8. Add potatoes and continue to cook for about 20 minutes longer, until potatoes are tender.
