Anne's Simple Escarole Soup Recipe

Serves 6

Ingredients:

  • 1 head escarole
  • 5 cups chicken stock
  • Grated Parmesan cheese


  • Instructions:

    1. Wash escarole thoroughly, drain, and break up with your hands.
    2. Boil broth, escarole and cook for 20 minutes.
    3. Top each serving with grated cheese.
