Eggplant Salad Recipe

Serves 4

Ingredients:

  • 1/4 cup olive oil
  • 1 1/2 tbsp fresh lemon juice
  • 2 tsp Dijon mustard
  • 1 garlic clove, chopped and mashed into a paste, with salt
  • 1/4 cup packed fresh basil leaves, washed well and spun dry
  • 1 eggplant, cut crosswise into 1/2-inch thick, slices
  • 2 tbsp pine nuts toasted


  • Instructions:

    1. Preheat grill pan.
    2. In a blender, combine oil, lemon juice, mustard, garlic paste, and half of basil.
    3. Blend until smooth.
    4. Reserve half of dressing in a measuring cup and in a large bowl, toss remaining dressing with eggplant slices.
    5. Grill eggplant slices in a grill pan over medium heat for about 6 to 7 minutes on each side.
    6. Arrange eggplant and remaining basil on a platter.
    7. Drizzle salad with reserved dressing and sprinkle with pine nuts.
