Eggplant Salad RecipeServes 4 Ingredients:Instructions:1. Cut eggplant in half lengthwise.2. Place in baking dish, cut sides down. 3. Bake at 350 F until soft, about 1 hour. 4. Scoop out insides of eggplant into a large bowl. 5. Mash and cut or process until eggplant is in fine pieces. 6. Add all other ingredients and mix. 7. Chill for 1 hour before serving. 8. Serve on crackers, pocket bread or by itself. |
