Tabasco Lemon Cucumbers Recipe
Serves 6 Ingredients: 2 Burpless English long cucumbers or more regular cucumbers, seeds removed
1/4 tsp salt
3 tbsp sour cream
1/2 lemon, juice only
Freshly ground black pepper
1/4 tsp Tabasco sauce, or to taste
Instructions: 1. Peel the cucumbers.
2. Slice them lengthwise down the middle.
3. With a small spoon, scrape out the seeds.
4. Slice the halves crosswise, paper thin.
5. Place in a bowl, add the salt, stir briefly, then refrigerate for 30 minutes.
6. Whisk the sour cream, lemon juice, pepper, and Tabasco together.
7. Take up the now limp cucumbers by the handful and squeeze as hard as possible to rid them of their water.
8. Stir the cucumbers into the dressing and serve.
