Iced Cucumber Soup Recipe
Serves 8 Ingredients: 5 cucumbers, peeled, seeded, and cut into 1-inch chunks
5 fresh mint leaves
2 cups buttermilk
2 cups chicken stock
1 tbsp lime juice
1/2 tsp salt
Instructions: 1. Place cucumbers and mint leaves in blender or food processor and whirl to a fine puree.
2. Pour into a 2-quart pitcher.
3. Add buttermilk, shicken stock, lime juice, and salt; mix well.
4. Chill for at least 1 hour or until icy cold.
5. Transport in thermos.
