Iced Cucumber Soup Recipe
Serves 4 Ingredients: 1 medium cucumber
1 cup chicken broth
1 green onion
1/2 tsp dried mint
1 tsp salt
Pinch garlic powder
1 tsp fresh lemon juice
1/2 cup sour cream
1 1/2 cups plain yogurt
Instructions: 1. Peel cucumber, remove seeds, and slice. Reserve 4 slices.
2. Put remainder in blender or food processor with broth, onion, mint, salt, garlic powder and lemon juice.
3. Process until finely chopped but not liquified.
4. Combine sour cream and yogurt in a bowl; stir in cucumber mixture.
5. Mix well and cover tightly.
6. Refrigerate for several hours to blend flavors before serving.
7. Spoon into chilled bowls.
8. Garnish with reserved thing cucumber slices.
