Cucumber Pepper Chutney Recipe
Makes 1 1/2 quarts Ingredients: 2 lb English cucumber
2 tsp kosher salt
1 cup red bell pepper
1 tsp garlic
1/2 tsp crushed red chiles
2 tsp fresh lime juice
1/3 cup olive oil
1/2 tsp apple cider vinegar
Sugar
1/4 cup fresh dill weed
Instructions: 1. Halve and seed cucumbers, chop fine.
2. Sprinkle with kosher salt.
3. Allow to drain in a collander for 30 to 45 minutes.
4. Rinse with cold water and drain well.
5. Combine cucumbers, bell peppers, shallots, garlic, red pepper flakes, limejuice, and olive oil in a large bowl; mix well.
6. Add vinegar, sugar, and salt to taste.
7. Let stand for 60 minutes.
8. Stir in minced dill.
9. Serve at room temperature.
