Tennessee Cornmeal Muffins Recipe

Makes 18 muffins

Ingredients:

  • 1 1/2 cup cornmeal
  • 1 tsp baking soda
  • 1 tsp sugar
  • 1 tsp salt
  • 2 eggs beaten
  • 2 cup buttermilk
  • 3 tbsp lard, melted


Instructions:

1. Combine cornmeal, soda, sugar, and salt.
2. Combine remaining ingredients; add to dry ingredients, mixing well.
3. Heat greased muffin pans in a 400 degree oven for 3 minutes or until very hot.
4. Spoon batter into hot muffin pans, filling 3/4 full.
5. Bake at 400 for 25 minutes or until lightly browned.
