Spicy Corn Ragout Recipe
Instructions:1. Heat oil in large, deep skillet or Dutch oven.
2. Add garlic and onion.
3. Cook gently until tender and fragrant, but do not brown.
4. Add red peppers, and jalapenos.
5. Cook for 5 to 10 minutes.
6. Stir in corn and mix together well.
7. Add stock and bring to a boil.
8. Cook gently for 5 minutes.
9. Stir in spinach and cook for 5 minutes longer, just until wilted.
10. Add pepper, salt, if desired and basil.
11. Taste and adjust seasonings, if necessary.
